Monte-Carlo Société des Bains de Mer signs up to Government’s Responsible Restaurant scheme

On Thursday 25 November, five high-end restaurants from the Monte-Carlo Société des Bains de Mer (SBM) Group signed up to the Government’s Responsible Restaurant® scheme.

The Blue Bay at the Monte-Carlo Bay Hotel & Resort (one Michelin star) and the Mada One at One Monte-Carlo, by Chef Marcel Ravin, the Elsa (one Michelin star) and Le Deck at the Monte-Carlo Beach, by Chef Manon Fleury, and L’Hirondelle at the Thermes Marins Monte-Carlo, by Chef Jean-Laurent Basile, which are already highly committed to eco-friendly practices and seasonal menus, were all keen to sign up to the government scheme. Each restaurant will now receive individual support to improve its approach and has committed to implementing at least one new eco-friendly practice each year.

The signing of the requirements by the restaurants’ chefs and their teams, which took place at the Monte-Carlo Bay Hotel & Resort in the presence of Valérie Davenet, Director of the Environment and representatives from the SBM Group leadership team, was a significant highlight of the European Week for Waste Reduction, as it marked the first Michelin-starred restaurants to join the scheme.

The Responsible Trader® and Responsible Restaurant® schemes were first launched in the Principality in 2017 by the Department of the Environment and Ecoscience Provence.
